What is the real star of the BBQ season? Mayonnaise of course!
Did you know that during the BBQ season tons of mayonnaise are consumed? Mayonnaise is a key ingredient in all of our favorite BBQ side dishes such as coleslaw, potato salad and pasta salad, in our potato crisp dips like sour cream & chive, as a dressing for a green salad, as well as accompanying our burgers and sausages!
No wonder that in mayonnaise loving countries the average consumption of one person is 5.1 kilograms per year. So, what is mayonnaise exactly, and how is it produced?
Mayonnaise is a stable emulsion of oil, egg yolks, vinegar, and depending on the recipe vinegar, mustard, lemon juice and various herbs and spices are added to give the product its unique flavor. In large-scale production of mayonnaise, a high-shear mechanical emulsification process is used to mix all the ingredients together ensuring a smooth consistency with a creamy texture. This mixing process takes place under a vacuum which removes air from the product. The removal of air is important as it significantly increases the shelf life of mayonnaise.
